Two-Bean Veggie Burgers

2 tsp (10 mL) vegetable oil
1 small onion, chopped
2 cloves garlic, minced
2 cups (500 mL) shredded carrot
1 cup (250 mL) chopped mushrooms
1 can (14 oz/398 mL) HEINZ® Chipotle BBQ Style Beans
1 can (14oz/398 mL) HEINZ® Dark Red Kidney Beans, drained and rinsed
1 cup (250 mL) quick-cooking rolled oats
¼ cup (50 mL) chopped fresh parsley
2 tsp (10 mL) each HEINZ® Worcestershire Sauce and HEINZ® Mustard
1 egg
8 toasted hamburger rolls
  Traditional hamburger condiments such as
HEINZ® Ketchup, Mustard and Relish

 

Heat the oil in a skillet set over medium heat. Add the onion, garlic, carrot and mushroom. Cook until tender and fragrant. Cool to room temperature.

Place the baked beans, kidney beans, onion mixture, half the rolled oats, parsley, Worcestershire, mustard and egg in a food processor. Pulse until well combined but still chunky. Transfer to a bowl and stir in remaining rolled oats; chill for at least 30 minutes or overnight. Meanwhile, line a baking sheet or grilling basket with foil. Spray foil with cooking spray. Scoop chilled mixture into 10 patty-like shapes onto sprayed foil. Chill for additional 15 minutes.

Preheat the grill to medium. Place grilling basket onto grill or slide the baking sheet with the patties onto the grill. Cook the patties, turning once with a flexible spatula, for 7 minutes per side, or until lightly browned. Transfer the burgers to toasted rolls. Serve with traditional burger condiments such as ketchup, mustard and relish.

For a cheeseburger version, top each burger with a slice of cheddar or mozzarella cheese during the last minute of cooking.
 
2. For a salad supper, serve the burgers on a bed of greens mixed with chopped fresh vegetables. Drizzle with your favourite dressing.
 
3. For a pull-out-of the freezer vegetarian solution, double the batch and freeze extra cooked burgers, individually wrapped in plastic wrap. To reheat, unwrap and microwave on High for 2 to 2 ½ minutes, turning over once during cooking.
