Easy Chicken and Bean Ragout

1 tbsp (15 mL) vegetable oil
8 boneless, skinless chicken thighs, about 1 ½ lb (750 g)
¼ tsp (1 mL) each salt and pepper
½ cup (125 mL) finely chopped onion, about 1 small
1 cup (250 mL) sliced carrots, about 3 medium
2 tsp (10 mL) dried thyme leaves
2 cloves garlic, minced
1 can (796 mL) diced tomatoes, drained
½ cup (125 mL) white wine or apple juice
1 can (14 oz/398 mL) HEINZ® Original Beans with Pork in Tomato Sauce
or HEINZ® Deep-Browned® Beans with Pork in Tomato Sauce
Topping:  
½ cup (125 mL) soft, fresh whole wheat breadcrumbs, toasted
1 tbsp (15 mL) chopped fresh parsley
2 tsp (10 mL) butter
1 clove garlic, minced
   

Heat the oil in a nonstick skillet set over medium-high heat. Sprinkle the chicken with salt and pepper. Brown the chicken in batches and transfer to a slow cooker.

Add the onions and carrots to the pan. Cook, stirring until lightly browned. Stir in thyme and cook for 1 minute. Stir in garlic, tomatoes and wine or apple juice. Bring to a boil. Pour over the chicken in the slow cooker. Cook on high for 2 hours or on low for 4 hours or until chicken is very tender. Stir in beans and cook for 1 more hour.

Topping: Heat the butter and garlic in the microwave on high for 20 seconds. Toss with bread crumbs and parsley. Sprinkle some of the crumb mixture over each serving.

Makes 4 servings.

1. For an oven variation, transfer browned chicken and other ingredients to a casserole dish and back at 350°F (180°C) for 1 hour.
 
2. For make-ahead ease, brown chicken and vegetables and store in separate containers in the refrigerator for up to 24 hours.
Transfer to the slow cooker and add 1 extra hour of cooking time before adding beans.
 
3. For a hungry crowd, the recipe doubles easily.
