Pepper and Beans Fajitas

1 tbsp (15 mL) vegetable oil
1 each red, yellow and green pepper, chopped
½ cup (125 mL) chopped red onion
2 tsp (10 mL) chili powder
1 tsp (5 mL) cumin
1 can (14 oz/398 mL) HEINZ® Original Beans in Tomato Sauce
2 tsp (10 mL) fresh lime juice
8 small (6-in/15 cm) flour tortillas
Shredded lettuce, shredded cheese, salsa and
sour cream (optional)

 

Heat the oil in a non-stick skillet set over medium-high heat. Add the peppers and onions and sauté until lightly browned. Stir in the chili powder and cumin and cook for 1 minute.

Add the beans to the pan and reduce the heat to medium. Cook, stirring often until beans are heated through. Stir in the lime juice and remove from the heat. Divide the mixture between warmed flour tortillas and garnish with lettuce, cheese, salsa and sour cream (if using) to make fajitas.

Makes 4 servings.

For a quick and easy side dish, serve the bean mixture with grilled or roasted meats.
 
2. For a healthy bean dip, top the warm or cool bean mixture with light sour cream and chopped green onions and serve with baked nacho chips.
 
3. For a spicier filling, stir in hot pepper sauce to taste.
