Mixed Bean Casserole

8 oz (250 g) bacon, diced
1 large onion, chopped
1 clove garlic, minced
⅓ cup (75 mL) packed brown sugar
¼ cup (50 mL) vinegar
1 tbsp (15 mL) Dijon mustard
2 cans (14 oz/398 mL each) HEINZ® Chipotle BBQ Style Beans
1 can (14 oz/398 mL each) HEINZ® Red Kidney Beans (light or dark), rinsed & drained
1 can (19 oz/540 mL) chick peas, rinsed and drained
1 can (19 oz/540 mL) black beans, rinsed and drained
1 can (14 oz/398 mL) lima beans, rinsed and drained
⅓ cup (75 mL) fancy molasses
  Salt & pepper to taste

Preheat oven to 350°F (180°C).

Sauté bacon, onion and garlic in a large skillet over medium heat 8 to 10 minutes until golden. Drain off excess fat. Stir in brown sugar, vinegar and mustard. Cover and simmer, stirring occasionally for 10 minutes.

Combine all the beans and molasses in a (3 qt/3 L) baking dish. Mix well. Spoon bacon mixture on top.

Bake for 50 to 60 minutes or until bubbling.

Makes about 12 servings.

1. Use your favourite variety of Heinz beans such as: Chili Style Pinto & Red Kidney Beans, Maple Style Beans, Beans with Pork and Molasses, or Brown Sugar and Bacon. Make sure to keep both cans of beans in their sauce.
 
2. Using vegetarian varieties of beans, this makes a satisfying vegetarian main course as well as a side dish.
 
3. Leftovers reheat well. It’s also great cold as a salad.
