Ginger Beans with Mango

Ginger Beans

1 tbsp (15 mL) vegetable oil
¼ cup (50 mL) thinly sliced red onion
2 tsp (10 mL) minced fresh ginger
1 can (14 oz/398 mL) HEINZ® Original Beans in Tomato Sauce
1 mango, peeled and chopped
2 tbsp (30 mL) finely chopped cilantro
1 tbsp (15 mL) fresh lime juice
1 tsp (5 mL) finely grated lime zest

Heat oil in a nonstick skillet set over medium heat. Add the onion and ginger. Cook, stirring occasionally until softened, about 3 minutes.

Add the baked beans and cook, stirring occasionally until hot and bubbly. Add the mango and cook for 1 minute.

Stir in cilantro, lime juice and lime zest just before removing from the heat. Serve with grilled or baked fish, chicken, pork or tofu.

Makes 4 side servings.

1. For a spicier version, add hot pepper sauce to taste.
 
2. For another fruit variation, use fresh pineapple or peaches instead of mango.
 
3. For an island-inspired breakfast treat, spoon the bean mixture over poached eggs on toasted English muffings.
 
4. For a delicious wrap, roll bean mixture up in flour tortillas with sliced ham or roast chicken.
