Sweet Potato Maple Soup

Per serving: 229 Calories, 9.2 g protein, 1.7 g fat, 47 g carbohydrate, 7.6 g fibre, 852 mg sodium. Good source of iron (17% DV) and Excellent source of vitamin A (133% DV)

   
2 tsp (10 mL) olive or vegetable oil
1 ½ cups (375 mL) chopped onion
1 clove garlic, minced
5 cups (1.25 L) peeled & diced sweet potatoes
5 cups (1.25 L) vegetable broth
2 cans (14 oz/398 mL each) HEINZ® Maple Style Beans
½ tsp (2 mL) ground ginger
  Salt & pepper to taste

Sauté onion and garlic in oil in a large saucepan over medium heat for 5 minutes until softened.

Add remaining ingredients. Bring to a boil then reduce heat to medium-low. Cover and simmer 15 to 20 minutes or until potatoes are tender.

Purée until smooth using a food processor, blender or hand blender.

Makes about 8 servings.

1. Try other flavours of HEINZ Beans. The Brown Sugar & Bacon and the Original Beans in Tomato Sauce are both great.
 
2. Replace vegetable broth with chicken broth.
 
3. Add a drizzle of sour cream or maple syrup for a nice finishing touch.
 
4. For a creamier soup, stir in 1 cup (250 mL) cream.
 
5. Prepare a day ahead for convenience. It will thicken on standing so thin with additional broth to desired consistency.
